Gluten Free Biscottis

INGREDIENTS FOR THE BISCOTTI:

* 1 egg.
* 6 tablespoons water
* 2 cups almond flour sifted for best results
* ½ cup sunflower seeds ground into a flour
* 1 teaspoon baking powder
* 1/3 cup pecans or nuts of choice chopped
* Zest of 1 lemon and 1 orange
* 3 tablespoons monk fruit powder. Or sweetener of choice.
* ¼ cup melted virgin coconut oil.
* 1 teaspoon pure almond extract
FOR THE CHOCOLATE DRIZZLE:
* 2 tablespoons dark chocolate melted.

INSTRUCTIONS

1. Preheat oven to 180C .
2. Sift the almond flour in a large bowl. Grind the sunflower seeds. Then add the ground sunflower seeds, baking powder, monk fruit, lemon & orange zest, pecans, and mix well.
3. Mix the wet ingredients together- water, almond extract, coconut oil, and mix well. Add the wet batter on top of the dry batter and mix well until the dough comes together. Use your hands to mix once the dough firms up.

4. Place a piece of parchment paper on a sheet tray and use your hands and form the dough into a 10×3 inch log. You can make the shape wider and shorter if desired. Bake for 35 minutes then remove from oven and allow cool down for 15 minutes.

1. Once cooled, use a sharp knife to cut the log into 3/4 inch biscotti pieces and lay them on to a cooling rack. Place the cooling rack on to the sheet and bake for another 25-30 minutes until the biscotti are golden brown and have color around the edges. If you don’t have a cooling rack, flip the biscotti halfway to ensure even baking on each side.

2. Meanwhile, melt the chocolate.

3. Remove biscotti from oven and allow to cool for 10 minutes. Melt the chocolate and drizzle over biscottis.

Healthy Almond Cookies

This recipe is my favourite go-to cookie. Which are low in sugar as well as calories. I keep these cookies ready for any hungry moments. They go excellent for the time, also for guests. My friends love it.

Recipe:

3/4 cup almond flour
1 tsp of baking powder
4tbsp of coconut sugar
1/2 tsp cinnamon
1/3 cup or 1/2 apple softened apple
2tbsp peanut or almond butter
1/4 cup chocolate chips
Bake-180 C for 18-24 minutes

Whole wheat cookies with jam

Baking with Super Chef Layla Hesham Khonji, easy recipe for kids snack.

1. Whole wheat cookies with jam
2. Whole wheat cookies with peanut butter and jam.

Recipe:

1 cup whole wheat flour
1 tsp cornstarch
¾ tsp baking powder
¼ tsp salt
1 ½ tbsp (21g) unsalted butter melted
1 large egg white, room temperature
1 ½ tsp vanilla extract
10 dates- mashed
1-2 tbsp honey
3 tablespoons sugar free jam
1 tbsp peanut butter

Preheat the oven to 180degree C and line a baking sheet with a parchment paper.

In a medium bowl, whisk together the flour, cornstarch, baking powder, and salt. Then add in the butter, egg white, and vanilla. Stir in the date paste. Mix until incorporated. Chill the cookie dough for 30 minutes.

To prepare the filling, add the jam to a small bowl, and stir with a spoon until it’s smooth. Transfer the jam to a small zip-topped bag, and cut off a small piece of one corner. Roll the cookie dough into 24 small spheres, and place them on the prepared baking sheet. Using your index finger or thumb, make an indentation in the center of each, and pipe in the jam from the zip-topped bag. For the other half add peanut butter then top it up with jam.

Bake at 180degree C for 8-10 minutes. Cool on the baking sheet for 10 minutes before carefully transferring to a wire rack.

Chocolate chip cookies with jaggery

Ingredients

* 1 cup unsalted butter
* 3/4 cup light brown sugar
* 3/4 cup pure cane sugar
* 2 large eggs
* 2 teaspoons vanilla extract
* 2 1/4 cups divided into 2 parts- oat flour & all purpose flour.
* 1/2 teaspoon baking soda
* 1 teaspoon salt, heaping
* 12 ounces semi-sweet chocolate chips

Instructions

1. Pre-heat your oven to 180 C. or 375F.
2. Cream together (or mix together) the unsalted butter, brown sugar, and pure cane sugar.
3. Add the eggs and vanilla extract to your creamed mixture, mixing well.
4. In a separate mixing bowl, sift the flour, baking soda, and salt together.
5. Mix the sifted dry ingredients into the batter.
6. Add the chocolate chip.
7. Chill the cookie dough for about 2 hours or more.
8. Using a cookie scoop, drop cookies onto your cookie sheet.
9. Bake at 375° or 180 C for 10-11 minutes, or until the cookies are lightly golden and done.

Allow them to cool on a wire rack.
